Description

Delicious and nostalgic Peanut Butter Lunch Lady Bars with a perfect blend of creamy peanut butter and chewy oats, ideal for snacks or desserts.


Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup creamy peanut butter
  • 1 cup granulated sugar
  • 1 cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 cups quick oats
  • For the frosting:
  • ½ cup creamy peanut butter
  • 4 tablespoons unsalted butter, softened
  • 2 teaspoons vanilla extract
  • 3–4 tablespoons milk (as needed)
  • 2 cups powdered sugar


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 10×15-inch jelly roll pan or line it with parchment paper.
  3. Cream together the softened butter, peanut butter, granulated sugar, and brown sugar until smooth and fluffy.
  4. Incorporate the eggs one at a time, mixing well after each addition.
  5. Stir in the vanilla extract.
  6. Whisk together the flour, baking soda, and salt in a separate bowl.
  7. Add the dry mixture gradually to the wet ingredients, stirring until just combined.
  8. Fold in the quick oats.
  9. Spread the batter evenly in the prepared pan.
  10. Bake for 20–22 minutes until golden brown and a toothpick inserted into the center comes out clean.
  11. Remove from the oven and cool completely in the pan.
  12. Frost with the peanut butter frosting once cooled.
