Ingredients
- 1 cup rolled oats
- 1/2 cup protein powder
- 1/4 cup almond flour
- 1/2 cup unsweetened applesauce
- 1/4 cup honey or maple syrup
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- 1/2 tsp cinnamon
- Pinch of salt
Instructions
- Preheat oven to 350°F (175°C).
- In a mixing bowl, combine rolled oats, protein powder, almond flour, baking powder, cinnamon, and salt.
- In another bowl, mix applesauce, honey (or maple syrup), and vanilla extract until well blended.
- Combine wet and dry ingredients, stirring until a dough forms.
- Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
- Flatten each cookie slightly.
- Bake for 12-15 minutes until edges are golden.
- Allow to cool before serving.
Notes
Experiment with different flavors by adding chopped nuts or dark chocolate chips. Store cookies in an airtight container and freeze individual cookies for future snacks.
