Ingredients

  • 4 large potatoes (about 900 g)
  • 1 tablespoon olive oil (15 ml)

  • 1/2 teaspoon black pepper (1.5 g)
  • 1/2 pound ground beef (225 g)
  • 1/2 teaspoon garlic powder (1.5 g)
  • 1/2 teaspoon onion powder (1.5 g)
  • 1 cup shredded cheddar cheese (115 g)
  • 1/2 cup plain yogurt (120 ml)
  • 1/4 cup chopped green onions (15 g)
  • 1/4 cup diced bell peppers (40 g)
  • 1/4 cup chopped fresh parsley (15 g)


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Scrub the potatoes clean under running water.
  3. Pat the potatoes dry with a towel.
  4. Rub each potato with olive oil.
  5. Sprinkle the potatoes with salt and black pepper.
  6. Place the potatoes on a baking sheet.
  7. Bake the potatoes for 50-60 minutes, until tender.
  8. While the potatoes bake, heat a pan over medium heat.
  9. Add ground beef to the pan.
  10. Season the beef with garlic powder and onion powder.
  11. Cook the beef until browned and fully cooked.
  12. Drain any excess fat from the beef.
  13. Remove potatoes from the oven and let cool slightly.
  14. Cut each potato in half lengthwise.
  15. Scoop out the insides, leaving a 1/4-inch shell.
  16. Place potato skins back on the baking sheet.
  17. Fill each skin with cooked ground beef.
  18. Sprinkle shredded cheddar cheese over the beef.
  19. Return the potato skins to the oven.
  20. Bake for 5-7 minutes, until cheese melts.
  21. Remove the potato skins from the oven.
  22. Top each with a dollop of sour cream.
  23. Add chopped green onions on top of the sour cream.
  24. Sprinkle diced tomatoes over the potato skins.
  25. Garnish with chopped fresh cilantro.
  26. Serve immediately.
