Ingredients
- 1 pound ground beef
- 4 medium potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- Salt and pepper to taste
- 2 tablespoons olive oil
- Optional: shredded cheese, green onions for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add chopped onion, bell pepper, and garlic; sauté until softened.
- Add ground beef and cook until browned.
- Stir in diced potatoes; season with salt and pepper.
- Cover and cook for about 20-25 minutes, stirring occasionally, until the potatoes are tender.
- Optionally, sprinkle with cheese and allow to melt before serving.
- Garnish with green onions if desired and enjoy!
Notes
For best results, cook the meat thoroughly before adding the potatoes and use a lid to speed up the cooking time for the potatoes.
