Description

A comforting blend of ground beef, potatoes, and vegetables, perfect for busy weeknights or lazy brunches.

Ingredients

  • 1 pound ground beef
  • 4 medium potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Optional: shredded cheese, green onions for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chopped onion, bell pepper, and garlic; sauté until softened.
  3. Add ground beef and cook until browned.
  4. Stir in diced potatoes; season with salt and pepper.
  5. Cover and cook for about 20-25 minutes, stirring occasionally, until the potatoes are tender.
  6. Optionally, sprinkle with cheese and allow to melt before serving.
  7. Garnish with green onions if desired and enjoy!

Notes

For best results, cook the meat thoroughly before adding the potatoes and use a lid to speed up the cooking time for the potatoes.
