A comforting and flavorful one-pan meal that combines ground beef, pasta, and cheesy enchilada goodness.
Ingredients
- 1 lb ground beef
- 1 cup onion, chopped
- 2 cups water
- 1 packet enchilada seasoning
- 1 cup uncooked pasta
- 1 cup shredded cheese
- 1 can diced tomatoes
- Salt and pepper to taste
Instructions
- Brown the ground beef and onion in a large skillet over medium heat until the meat is fully cooked. Drain excess fat.
- Add water, enchilada seasoning, and diced tomatoes, mixing well.
- Stir in the uncooked pasta and bring to a boil.
- Reduce heat, cover, and let simmer for about 15 minutes or until the pasta is cooked.
- Stir in shredded cheese and let it melt.
- Season with salt and pepper to taste before serving.
Notes
For added flavor, consider adding diced bell peppers or jalapeños. Ground turkey can be used as a lighter alternative to beef.
