Description

A comforting and flavorful one-pan meal that combines ground beef, pasta, and cheesy enchilada goodness.


Ingredients

  • 1 lb ground beef
  • 1 cup onion, chopped
  • 2 cups water
  • 1 packet enchilada seasoning
  • 1 cup uncooked pasta
  • 1 cup shredded cheese
  • 1 can diced tomatoes
  • Salt and pepper to taste


Instructions

  1. Brown the ground beef and onion in a large skillet over medium heat until the meat is fully cooked. Drain excess fat.
  2. Add water, enchilada seasoning, and diced tomatoes, mixing well.
  3. Stir in the uncooked pasta and bring to a boil.
  4. Reduce heat, cover, and let simmer for about 15 minutes or until the pasta is cooked.
  5. Stir in shredded cheese and let it melt.
  6. Season with salt and pepper to taste before serving.

Notes

For added flavor, consider adding diced bell peppers or jalapeños. Ground turkey can be used as a lighter alternative to beef.
