Delightful cookies inspired by classic Boston cream pie, featuring a soft cookie base with vanilla pastry cream filling and a rich chocolate ganache.
Ingredients
- 2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 cup vanilla pastry cream
- 1/2 cup chocolate ganache
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together flour, cocoa powder, baking soda, and salt. Set aside.
- In a mixing bowl, beat together the softened butter, granulated sugar, and brown sugar until creamy.
- Add the egg and vanilla extract, mixing until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Drop tablespoon-sized amounts of dough onto the prepared baking sheet.
- Bake for 10-12 minutes, or until the edges are set. Let cool completely on a wire rack.
- Once cooled, fill half of the cookies with vanilla pastry cream and top with another cookie.
- Drizzle or dip the cookies into chocolate ganache. Let set before serving.
Notes
Chill the dough for about 30 minutes to enhance flavor and prevent spreading. Store cookies in an airtight container to maintain freshness.
