Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup granulated sugar (for crust)
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar (for filling)
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/4 cup sour cream
  • Assorted toppings (fruits, sprinkles, chocolate, etc.)


Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Combine graham cracker crumbs, 1/4 cup sugar, and melted butter in a bowl. Mix well.
  3. Press the mixture into the bottom of a mini cheesecake pan or muffin tin lined with paper liners.
  4. Beat the cream cheese, 1/2 cup sugar, and vanilla until smooth in a large bowl.
  5. Add eggs one at a time, mixing well after each addition.
  6. Stir in sour cream until well combined.
  7. Pour the cream cheese mixture over the crust in the pan.
