Ingredients
- 2 medium zucchinis, grated
- 2 medium carrots, grated
- 1 cup flour
- 1 egg
- 1 teaspoon baking powder
- Salt, to taste
- Pepper, to taste
- Oil, for frying
Instructions
- Combine the grated zucchinis and carrots in a bowl.
- Add the flour, egg, baking powder, salt, and pepper, mixing until well combined.
- Heat oil in a frying pan over medium heat.
- Drop spoonfuls of the vegetable mixture into the hot oil.
- Fry until golden brown on both sides.
- Drain on paper towels and serve warm.
Notes
For extra crunch, try adding finely chopped onions or bell peppers to the mixture.
