Description

A creamy, savory vegan dip made with spinach and artichokes, perfect for gatherings and any occasion.


Ingredients

  • 1 teaspoon oil
  • 3 cloves garlic, chopped
  • 10 ounces fresh baby spinach
  • 16 ounces vegan cream cheese, room temperature
  • â…“ cup vegan mayo
  • 1 (14-ounce) can artichoke hearts, drained and chopped
  • ¼ cup nutritional yeast (or vegan parmesan)
  • ¼ teaspoon black pepper
  • ¼ teaspoon salt


Instructions

  1. Heat the oil in a large pan over medium heat.
  2. Add the chopped garlic and sauté until it browns, about 2 minutes.
  3. Toss in the fresh spinach and cook until it wilts.
  4. Remove the pan from the stove and set aside.
  5. In a baking dish, mix together the vegan cream cheese, vegan mayo, chopped artichoke hearts, nutritional yeast, sautéed spinach, salt, and black pepper until well mixed.
  6. Bake your dip in the preheated oven for 15-20 minutes, or until it bubbles invitingly.
  7. Serve warm and enjoy the praises from your guests.

Notes

For added brightness, experiment with freshly squeezed lemon juice or a dash of paprika. Adjust seasonings to taste before baking.
