Description
A creamy, savory vegan dip made with spinach and artichokes, perfect for gatherings and any occasion.
Ingredients
- 1 teaspoon oil
- 3 cloves garlic, chopped
- 10 ounces fresh baby spinach
- 16 ounces vegan cream cheese, room temperature
- â…“ cup vegan mayo
- 1 (14-ounce) can artichoke hearts, drained and chopped
- ¼ cup nutritional yeast (or vegan parmesan)
- ¼ teaspoon black pepper
- ¼ teaspoon salt
Instructions
- Heat the oil in a large pan over medium heat.
- Add the chopped garlic and sauté until it browns, about 2 minutes.
- Toss in the fresh spinach and cook until it wilts.
- Remove the pan from the stove and set aside.
- In a baking dish, mix together the vegan cream cheese, vegan mayo, chopped artichoke hearts, nutritional yeast, sautéed spinach, salt, and black pepper until well mixed.
- Bake your dip in the preheated oven for 15-20 minutes, or until it bubbles invitingly.
- Serve warm and enjoy the praises from your guests.
Notes
For added brightness, experiment with freshly squeezed lemon juice or a dash of paprika. Adjust seasonings to taste before baking.
