Ingredients
- – 4 boneless, skinless chicken breasts (680g)
- – 1/2 teaspoon (3 ml) salt
- – 1/2 teaspoon (3 ml) garlic powder
- – 1/2 teaspoon (3 ml) onion powder
- – 1/4 teaspoon (1 ml) black pepper
- – 2 tablespoons (30 ml) olive oil
- – 2 tablespoons (30 ml) vegetable oil
- – 1 1/2 cups chicken broth (360 ml)
- – 3 tablespoons (45 ml) cornstarch
- – 1 cup heavy cream (240 ml)
- – 4 cloves garlic, minced
- – 1 1/2 teaspoons (8 ml) Italian seasoning
- – 1/2 teaspoon (3 ml) salt
- – 1/2 teaspoon (3 ml) black pepper
- – 1/2 teaspoon (3 ml) red pepper flakes
- – 1/2 teaspoon (3 ml) paprika
- – 5/6 cup chopped sun-dried tomatoes, drained (160 ml)
- – 1/2 cup (120 ml) freshly grated halal cheese
- – 6-8 fresh basil leaves, chopped
Instructions
- In a small bowl, combine the salt, garlic powder, onion powder, and black pepper. Use this mix to coat both sides of the chicken breasts.
- Place a large skillet on medium-high heat. Pour in the olive oil and vegetable oil, allowing them to heat up.
- Brown the chicken breasts on both sides until they achieve a golden color, then remove the skillet from the heat and set it aside. Remember, the chicken isn’t fully cooked yet; just browned. Turn off the heat but leave the oil in the skillet for later use.
- In a separate bowl, stir together the chicken broth and cornstarch until smooth and free of lumps.
- Transfer this broth mixture to the base of a slow cooker.
- Mix in the heavy cream, minced garlic, Italian seasoning, salt, black pepper, red pepper flakes, and paprika into the slow cooker.
- Place the browned chicken breasts into the slow cooker, pouring the reserved oil from the skillet over them.
- Scatter the chopped sun-dried tomatoes over each piece of chicken. Set the slow cooker to low for 6-8 hours. Avoid cooking on high. Refrain from lifting the lid during cooking, as this can extend the cooking time and affect tenderness. Let it cook without interference.
- Once cooked, remove the chicken breasts and blend in the freshly grated cheese. Return the chicken to the slow cooker, immerse in the sauce, sprinkle with chopped basil leaves, and then serve.
