Ingredients

  • 2 medium sweet potatoes
  • 1 tablespoon olive oil (15 ml)
  • 1 teaspoon ground cumin (2.5 g)
  • 1 teaspoon smoked paprika (2.5 g)
  • 1/2 teaspoon garlic powder (1.25 g)
  • 1/2 teaspoon onion powder (1.25 g)
  • 1/2 teaspoon salt (2.5 g)
  • 1/4 teaspoon black pepper (0.5 g)
  • 8 small corn tortillas
  • 1 avocado, sliced
  • 1 cup shredded red cabbage (90 g)
  • 1/4 cup chopped fresh cilantro (15 g)
  • 1 lime, cut into wedges
  • 1/4 cup Greek yogurt (60 ml)
  • 1 tablespoon lime juice (15 ml)
  • 1/2 teaspoon agave nectar (2.5 ml)


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and cube the sweet potatoes into 1/2-inch pieces.
  3. In a bowl, combine sweet potatoes, olive oil, cumin, smoked paprika, garlic powder, onion powder, salt, and black pepper.
  4. Toss the sweet potatoes until they are well coated with the seasoning.
  5. Spread the sweet potatoes in a single layer on a baking sheet.
  6. Roast in the oven for 25-30 minutes, stirring halfway through, until tender and slightly crispy.
  7. While the sweet potatoes roast, heat a dry skillet over medium heat.
  8. Warm each corn tortilla in the skillet for about 30 seconds per side.
  9. In a small bowl, mix sour cream, lime juice, and honey until smooth.
  10. Assemble the tacos by placing roasted sweet potatoes on each tortilla.
  11. Top with sliced avocado and shredded red cabbage.
  12. Drizzle with the lime sour cream sauce.
  13. Garnish with chopped cilantro.
  14. Serve with lime wedges on the side.
