Ingredients
- 2 medium sweet potatoes
- 1 tablespoon olive oil (15 ml)
- 1 teaspoon ground cumin (2.5 g)
- 1 teaspoon smoked paprika (2.5 g)
- 1/2 teaspoon garlic powder (1.25 g)
- 1/2 teaspoon onion powder (1.25 g)
- 1/2 teaspoon salt (2.5 g)
- 1/4 teaspoon black pepper (0.5 g)
- 8 small corn tortillas
- 1 avocado, sliced
- 1 cup shredded red cabbage (90 g)
- 1/4 cup chopped fresh cilantro (15 g)
- 1 lime, cut into wedges
- 1/4 cup Greek yogurt (60 ml)
- 1 tablespoon lime juice (15 ml)
- 1/2 teaspoon agave nectar (2.5 ml)
Instructions
- Preheat the oven to 400°F (200°C).
- Peel and cube the sweet potatoes into 1/2-inch pieces.
- In a bowl, combine sweet potatoes, olive oil, cumin, smoked paprika, garlic powder, onion powder, salt, and black pepper.
- Toss the sweet potatoes until they are well coated with the seasoning.
- Spread the sweet potatoes in a single layer on a baking sheet.
- Roast in the oven for 25-30 minutes, stirring halfway through, until tender and slightly crispy.
- While the sweet potatoes roast, heat a dry skillet over medium heat.
- Warm each corn tortilla in the skillet for about 30 seconds per side.
- In a small bowl, mix sour cream, lime juice, and honey until smooth.
- Assemble the tacos by placing roasted sweet potatoes on each tortilla.
- Top with sliced avocado and shredded red cabbage.
- Drizzle with the lime sour cream sauce.
- Garnish with chopped cilantro.
- Serve with lime wedges on the side.
