Ingredients

  • 2 tablespoons olive oil (30 ml)
  • 1 ½ pounds ground beef lean (680 g)
  • 1 yellow onion diced
  • 1 medium red bell pepper diced
  • 1 medium green bell pepper diced
  • 3 small cloves garlic minced
  • 1 teaspoon (5 ml) Italian seasoning or cajun seasoning
  • 2 teaspoons (10 ml) Worcestershire sauce
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 14 ounces canned diced tomatoes (400 g)
  • 1 cup long grain white rice (240 ml)
  • 1 ½ cups beef broth (360 ml)
  • 1 ½ cups shredded cheese (cheddar, mozzarella, or both)
  • parsley for garnish


Instructions

  1. Set your oven to 350°F/180°C to preheat. Warm olive oil in a skillet over medium-high heat, then introduce the ground beef.
  2. Cook the beef, crumbling it with a spatula until it loses its pink color. Remove excess fat, then incorporate the onion and bell peppers. Sauté for about 2-3 minutes.
  3. Mix in garlic, your choice of seasoning, Worcestershire sauce, salt, and black pepper. Cook for an additional 30 seconds. Pour in the diced tomatoes and blend well.
  4. Add the rice and beef broth. Stir the mixture and allow it to reach a boil, then cover the pan with a lid (or foil if using a casserole dish without a lid).
  5. Transfer the covered dish to the oven and bake for 20-25 minutes. Check the rice to ensure it is tender (taste to confirm it’s not crunchy). If needed, put it back in the oven with a bit of added water.
  6. Take the dish out of the oven, sprinkle the top with cheese.
  7. Place it back in the oven under the broiler for 3-5 minutes or until the cheese is melted and bubbly. Finish with a sprinkle of fresh parsley before serving.
