Ingredients
- 2 tablespoons olive oil (30 ml)
- 1 ½ pounds ground beef lean (680 g)
- 1 yellow onion diced
- 1 medium red bell pepper diced
- 1 medium green bell pepper diced
- 3 small cloves garlic minced
- 1 teaspoon (5 ml) Italian seasoning or cajun seasoning
- 2 teaspoons (10 ml) Worcestershire sauce
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- 14 ounces canned diced tomatoes (400 g)
- 1 cup long grain white rice (240 ml)
- 1 ½ cups beef broth (360 ml)
- 1 ½ cups shredded cheese (cheddar, mozzarella, or both)

Instructions
- Set your oven to 350°F/180°C to preheat. Warm olive oil in a skillet over medium-high heat, then introduce the ground beef.
- Cook the beef, crumbling it with a spatula until it loses its pink color. Remove excess fat, then incorporate the onion and bell peppers. Sauté for about 2-3 minutes.
- Mix in garlic, your choice of seasoning, Worcestershire sauce, salt, and black pepper. Cook for an additional 30 seconds. Pour in the diced tomatoes and blend well.
- Add the rice and beef broth. Stir the mixture and allow it to reach a boil, then cover the pan with a lid (or foil if using a casserole dish without a lid).
- Transfer the covered dish to the oven and bake for 20-25 minutes. Check the rice to ensure it is tender (taste to confirm it’s not crunchy). If needed, put it back in the oven with a bit of added water.
- Take the dish out of the oven, sprinkle the top with cheese.
- Place it back in the oven under the broiler for 3-5 minutes or until the cheese is melted and bubbly. Finish with a sprinkle of fresh parsley before serving.
