Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, chopped
  • 8 ounces cream cheese, softened
  • 1/4 cup powdered sugar


Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Whisk together the flour, sugar, baking powder, baking soda, and salt in a bowl.
  3. Mix the melted butter, eggs, buttermilk, and vanilla extract until combined in another bowl.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the chopped strawberries.
  5. Beat the cream cheese and powdered sugar until smooth in a separate bowl.
  6. Fill each muffin cup halfway with the batter, add a spoonful of the cream cheese mixture, then top with more muffin batter until filled almost to the top.
  7. Bake for 20-25 minutes, or until a toothpick inserted comes out clean.
  8. Let them cool slightly before serving.
