Ingredients

  • – 8 oz (227 g) flat rice noodles, medium width, same as used for Pad Thai
  • – 2 tbsp (30 ml) vegetable oil
  • – 3 tbsp (45 ml) minced shallots
  • – 3 garlic cloves, minced
  • – 2 tsp (10 ml) minced ginger
  • – 2 Thai Chiles, split in half lengthwise
  • – 5 tbsp (75 ml) red curry paste
  • – 1 1/4 cups (300 ml) beef stock
  • – 1 tbsp (15 ml) soy sauce
  • – 30 oz (850 g) coconut milk, 2 cans
  • – 3 makrut lime leaves or the juice of two limes
  • – 1 cup (150 g) baby corn, cut into 1/2 inch pieces
  • – 2 cups (300 g) cooked shredded beef
  • – salt and pepper to taste
  • – cilantro leaves
  • – crispy shallots
  • – lime wedges


Instructions

  1. Fill a large pot with water and bring it to a boil.
  2. Add the noodles, cover, and take off the heat. Let the noodles soak and soften for around 8 to 10 minutes. Drain them and put them aside.
  3. Heat the oil in a large saucepan over medium-high heat.
  4. Add the shallots, garlic, ginger, chiles, and curry paste, and cook until aromatic, approximately 3 to 4 minutes.
  5. Pour in the beef stock and soy sauce, and bring the mixture to a boil, which should take about 2 to 3 minutes.
  6. Lower the heat to medium and mix in the coconut milk. Add salt and pepper to taste.
  7. Gently crush the makrut lime leaves in your hand and add them to the soup (or mix in the lime juice).
  8. Once the soup starts to simmer, which will take 2 to 3 minutes, add the baby corn and shredded beef, cooking for 4 to 5 minutes. Add the noodles and continue to simmer for another 2 to 3 minutes. Discard the chile halves.
  9. Adjust the seasonings, then garnish with cilantro leaves and crispy shallots. Serve with lime wedges.

Notes

  • For a vegetarian option, swap shredded beef with tofu or your favorite veggies for a new flavor twist.
  • For a spicier kick, add more Thai chiles or a splash of sriracha sauce to the soup.
  • Adjust seasonings to taste before serving, and add a squeeze of lime juice for a refreshing burst of flavor.
