A quick and comforting bowl of Spicy Peanut Udon Noodle Soup that blends the rich flavors of peanut butter and chili oil, perfect for busy evenings.
Ingredients
- 1 serving udon noodles (frozen)
- 1 tsp minced garlic
- 1 tsp diced green onions
- 1 1/4 tsp sugar
- 1/2 tbsp chicken bouillon
- 1 1/2 tbsp oyster sauce
- 1 tbsp light soy sauce
- 1/4 tsp rice or apple cider vinegar
- 1/2 tsp sesame oil
- 2 tbsp unsweetened peanut butter
- 1 tbsp chili oil (see notes)
- 1 1/2 cups hot water
- 1/4 tsp salt (if needed)
- 1 hard-boiled/jammy egg, diced green onion, roasted sesame seeds, chili oil for garnish
Instructions
- Soak the frozen udon in hot water or boil for 1 minute.
- Drain the udon and set aside for later use.
- In a bowl, mix together all the soup ingredients except for the hot water.
- Pour in the hot water and stir until well combined.
- Taste for seasoning and adjust with salt if needed.
- Add the udon noodles to the soup and garnish with your preferred toppings.
Notes
For an extra kick, feel free to add more chili oil. Consider incorporating vegetables like mushrooms or spinach for added flavor and texture.
