A flavorful dish featuring fresh scallops enveloped in a creamy and aromatic coconut curry sauce, perfect for a memorable meal.
Ingredients
- 1 lb fresh scallops
- 2 tbsp coconut oil
- 1 cup coconut milk
- 2 tbsp red curry paste
- 1 tbsp fish sauce
- 1 tbsp lime juice
- 1 tbsp brown sugar
- 2 cloves garlic, minced
- 1-inch piece of ginger, grated
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Rinse and pat dry the scallops with paper towels.
- Heat coconut oil in a large skillet over medium heat.
- Add the scallops in a single layer and sear for 2-3 minutes on each side until golden brown. Remove and set aside.
- In the same skillet, add garlic and ginger, sauté until fragrant.
- Add red curry paste and continue to cook for 1 minute.
- Pour in coconut milk, fish sauce, lime juice, and brown sugar, stirring to combine. Simmer for 5 minutes.
- Return the scallops to the skillet, coating them with the sauce. Simmer for an additional 2 minutes.
- Garnish with fresh cilantro before serving.
Notes
Use only fresh scallops for optimal taste. Adjust the red curry paste quantity for spice preference.
