Description

A vibrant and hearty Spanish fish stew that captures the essence of Mediterranean flavors, perfect for family gatherings.

Ingredients

  • 1 lb fish (such as cod or halibut)
  • 2 medium potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 fennel bulb, chopped
  • 1 can diced tomatoes
  • 4 cups fish broth
  • 2 teaspoons paprika
  • Salt and pepper to taste
  • Olive oil
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pan over medium heat.
  2. Add onion, garlic, and fennel; sauté until softened.
  3. Stir in the paprika and cook for another minute.
  4. Add diced tomatoes and fish broth, bringing to a simmer.
  5. Include the diced potatoes and cook until tender, about 10-15 minutes.
  6. Gently add the fish and cook until it flakes easily, about 5-7 minutes.
  7. Season with salt and pepper to taste.
  8. Garnish with fresh parsley before serving.

Notes

For best results, use seasonal fish and let the stew rest for a few minutes before serving to enhance the flavors.
