A comforting Southern Maple Sweet Potato Casserole featuring layers of sweet potatoes, marshmallows, and pecans, perfect for family gatherings.
Ingredients
- 4 medium sweet potatoes
- 1 cup maple syrup
- 1/2 cup brown sugar
- 1/2 cup raisins
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 2 cups mini marshmallows
- 1 cup crushed pecans
- 1/4 cup butter or vegan butter
Instructions
- Preheat your oven to 350°F (175°C).
- Peel and chop the sweet potatoes, then boil them until tender. Drain and mash.
- In a large bowl, combine the mashed sweet potatoes, maple syrup, brown sugar, raisins, and spices. Mix well.
- Spread the mixture into a greased baking dish and top with marshmallows.
- In a separate bowl, mix crushed pecans with melted butter (or vegan butter) and sprinkle over the top.
- Bake in the preheated oven for 30-40 minutes, or until heated through and the topping is golden brown.
Notes
For extra flavor, consider roasting the sweet potatoes before mashing. Adjust spices and sweetness to suit your taste.
