Delicious no-bake energy bites that capture the essence of s’mores with a combination of oats, nut butter, chocolate, and graham crackers.
Ingredients
- 1 cup oats
- 1/2 cup nut butter (peanut or almond)
- 1/4 cup honey or maple syrup
- 1/2 cup mini chocolate chips
- 1/2 cup crushed graham crackers
- 1/4 cup mini marshmallows
- 1 tsp vanilla extract
Instructions
- Combine the oats, nut butter, honey or maple syrup, and vanilla extract in a large bowl. Mix until well combined.
- Stir in the mini chocolate chips, crushed graham crackers, and mini marshmallows until evenly distributed.
- Use your hands to form the mixture into small balls or bites.
- Place the energy bites on a baking sheet lined with parchment paper and refrigerate for about 10 minutes to set.
- Enjoy immediately or store in an airtight container in the fridge for up to a week.
Notes
Dampen your hands while forming the bites to prevent the mixture from sticking. Feel free to adjust the sweetness with more honey or sweetener as desired.
