Description

Learn how to make delicious Slow Cooker Stuffed Bell Peppers with this easy recipe. Perfect for a hearty and flavorful meal that’s sure to impress!

Ingredients

  • 1 pound lean ground beef (454 g)
  • 1 can (411 g) fire-roasted diced tomatoes
  • 1 cup cooked rice (240 ml)
  • 2 tablespoons (30 ml) ketchup
  • 1 teaspoon (5 ml) Worcestershire sauce
  • 1 teaspoon (5 ml) ground black pepper
  • 6 green bell peppers, tops and seeds removed (reserve tops)
  • 1/3 cup water (80 ml)

Instructions

  1. Warm up a large frying pan over medium-high heat. Stir and cook the beef in the heated pan until it is browned and crumbly, which should take about 5 to 7 minutes; drain and discard the fat.
  2. In a mixing bowl, combine the cooked beef with the tomatoes, rice, ketchup, Worcestershire sauce, and black pepper.
  3. Fill each green bell pepper with the beef mixture.
  4. Place the stuffed bell peppers into the slow cooker, and put the saved tops back on each one. Add water around the bottom of the stuffed peppers.
  5. Set the slow cooker to Low and let it cook for 6 to 8 hours.

Notes

  • Consider using ground turkey instead of ground beef for a healthier option.
  • Experiment with brown rice or quinoa for added nutrition.
  • Customize the seasoning with herbs like thyme or oregano for a unique taste.
