Description

A comforting slow-cooked beef dish, perfect for chilly nights, blending spices and rich flavors for a tender meal.


Ingredients

  • 2 pounds beef stew meat or chuck roast (cut into chunks)
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon paprika
  • 1 medium onion (diced)
  • 3 cloves garlic (minced)
  • 1 ½ cups beef broth
  • 3 tablespoons Worcestershire sauce
  • 1 tablespoon soy sauce (optional)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 2 tablespoons cornstarch
  • 3 tablespoons water (to mix with cornstarch)


Instructions

  1. Start by seasoning the beef. Mix the salt, pepper, garlic powder, onion powder, and paprika in a small bowl.
  2. Pat the beef dry to remove excess moisture, then rub the seasoning mix over the chunks of meat.
  3. In your preheated skillet, add olive oil and sauté the seasoned beef chunks. Sear them for 2-3 minutes on all sides until browned.
  4. Transfer the meat to the slow cooker and add diced onion and minced garlic directly over the beef.
  5. Pour in the beef broth, Worcestershire sauce, and optional soy sauce. Sprinkle the dried thyme and parsley over the mixture and stir gently.
  6. Set your slow cooker on LOW for 6-7 hours or HIGH for 3-4 hours.
  7. After the cooking time, mix the cornstarch and water to form a slurry and pour it into the slow cooker.
  8. Cover the slow cooker and cook for an additional 20-30 minutes until the gravy thickens.

Notes

Let the beef tips rest for a few minutes before serving to allow the juices to redistribute.
