Description

A warm and comforting sausage soup, rich in flavors and perfect for winter evenings.


Ingredients

  • 1 tablespoon extra virgin olive oil
  • ½ small white onion, diced
  • 3 cloves garlic, minced
  • 1 pound mild Italian sausage
  • 1 can (6 ounces) tomato paste
  • 1 can (14.5 ounces) diced tomatoes
  • 1 teaspoon Italian seasoning
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ½ cup cream cheese
  • 1 cup chicken broth
  • 1 cup heavy cream
  • ¼ cup Parmesan cheese


Instructions

  1. In a large pan over medium heat, add the olive oil. Once hot, add the diced onions and sauté until slightly soft.
  2. Incorporate the minced garlic and cook for an additional minute.
  3. Add the mild Italian sausage, break it up, and cook until no longer pink.
  4. Mix in the tomato paste, diced tomatoes, Italian seasoning, kosher salt, and black pepper.
  5. Incorporate the cream cheese and chicken broth, stirring until the cream cheese dissolves.
  6. Stir in the heavy cream and Parmesan cheese.
  7. Cover and simmer for 5 minutes.

Notes

Consider adding fresh herbs for a burst of flavor. Adjust the thickness by adding chicken broth as needed.
