Description

A quick and easy side dish featuring fresh asparagus roasted to perfection with olive oil, salt, pepper, and a sprinkle of parmesan cheese.


Ingredients

  • 1 pound fresh asparagus
  • 1 tablespoon olive oil
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons grated parmesan cheese
  • Juice of 1 lemon (approximately 1 tablespoon)
  • Red pepper flakes (optional)


Instructions

  1. Preheat your oven to 425 degrees F and line a baking sheet with parchment paper.
  2. Rinse and dry the asparagus, then trim the tough ends.
  3. Place the asparagus in a single layer on the baking sheet and drizzle with olive oil.
  4. Season the asparagus with kosher salt and ground black pepper, tossing to coat evenly.
  5. Sprinkle grated parmesan cheese over the spears.
  6. Roast in the oven for about 10 minutes or until fork tender.
  7. Remove from the oven and squeeze fresh lemon juice over the asparagus. Optionally, add a pinch of red pepper flakes for extra flavor.
