Ingredients

  • 1 2/3 cups (235g) all-purpose flour
  • 1 1/2 tsp (8 ml) baking powder
  • 1 tsp (5 ml) salt
  • 1 tsp (5 ml) ground cinnamon
  • 1/2 tsp (3 ml) ground nutmeg
  • 1/4 tsp (1 ml) ground ginger
  • 1/8 tsp (1 ml) ground cloves
  • 3/4 cup (150g) packed light-brown sugar, broken up with fingertips
  • 1/2 cup (100g) granulated sugar
  • 1/2 cup (120 ml) vegetable oil
  • 3 large eggs
  • 1 1/2 cups (340g) canned pumpkin puree
  • 1 tsp (5 ml) vanilla extract
  • 1/3 cup (80 ml) granulated sugar
  • 1 tsp (5 ml) ground cinnamon


Instructions

  1. Heat the oven to 350°F.
  2. In a bowl, combine the flour, baking powder, salt, 1 teaspoon of cinnamon, nutmeg, ginger, and cloves. Create a hole in the center of the dry mix and set it aside.
  3. In another large bowl, mix the brown sugar, 1/2 cup of white sugar, vegetable oil, eggs, pumpkin puree, and vanilla extract until smooth.
  4. Incorporate the dry ingredients into the pumpkin blend, gently mixing with a silicone spatula until the mixture is uniform and flour streaks disappear (a few lumps are acceptable).
  5. Coat donut baking pans – totaling 18 wells (three pans with 6 wells each). Fill each donut cavity about 3/4 full with the batter using a spoon or piping bag (approximately 1/4 cup per well).
  6. Bake the donuts in the preheated oven for 13 to 16 minutes, or until a toothpick inserted into the center comes out clean. Let the donuts cool slightly.
  7. While they cool, mix 1/3 cup of sugar with 1 teaspoon of cinnamon in a container. Place a warm donut into the container, cover, and shake to coat it with the sugar mix. If the sugar doesn’t stick well, lightly spray the donuts with non-stick spray for better adherence.
  8. Transfer the donuts to a wire rack to cool completely. Store the finished pumpkin donuts in a sealed container.

Notes

  • For a more intense flavor, increase the amounts of cinnamon, nutmeg, ginger, and cloves in the batter.
  • Mix the donut batter thoroughly without overmixing to preserve a light and fluffy texture.
  • Adjust the sweetness of the cinnamon coating by adding more or less sugar to suit personal taste preferences.
