Description

A delightful cake bursting with the flavors of pineapple and coconut, perfect for any occasion.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened shredded coconut
  • 1 cup crushed pineapple, drained
  • 1/2 cup unsalted butter, softened
  • 1 cup milk
  • 3 large eggs
  • 2 tsp baking powder
  • 1 tsp vanilla extract
  • 1/2 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a cake pan.
  2. Cream the softened butter and sugar together until light and fluffy.
  3. Add the eggs, one at a time, mixing well after each addition.
  4. Stir in the crushed pineapple and vanilla extract.
  5. Combine the flour, baking powder, shredded coconut, and salt in another bowl.
  6. Gradually add the dry ingredients to the wet mixture, alternating with milk, and mix until just combined.
  7. Pour the batter into the prepared cake pan and smooth the top.
  8. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  10. Serve as is or frost with your favorite icing.

Notes

For enhanced flavor, consider using coconut milk instead of regular milk. Dust with powdered sugar or top with frosting for presentation.
