Ingredients
- 2 cups old-fashioned oats
- 1 cup peanut butter (creamy or chunky)
- 4 tablespoons unsalted butter
- ½ cup brown sugar
- ¼ cup whole milk
- 1 teaspoon vanilla extract
- 1 cup caramel sauce (store-bought or homemade)
- 1 cup chocolate chips (melted)
- Sea salt (optional, for garnish)
Instructions
- Combine the butter, brown sugar, and milk in a medium saucepan over medium heat until melted and bubbly.
- Mix in peanut butter and vanilla extract until smooth.
- Add the oats, stirring until evenly coated.
- Portion the mixture onto a parchment-lined tray using a tablespoon or small cookie scoop.
- Flatten each portion slightly and create a small indentation for the caramel.
- Spoon about a teaspoon of caramel sauce into the indentation of each cookie.
- Melt the chocolate chips in the microwave, then drizzle over the cookies.
- Refrigerate the cookies for at least 30 minutes until set.
