Ingredients

  • 2 cups old-fashioned oats
  • 1 cup peanut butter (creamy or chunky)
  • 4 tablespoons unsalted butter
  • ½ cup brown sugar
  • ¼ cup whole milk
  • 1 teaspoon vanilla extract
  • 1 cup caramel sauce (store-bought or homemade)
  • 1 cup chocolate chips (melted)
  • Sea salt (optional, for garnish)


Instructions

  1. Combine the butter, brown sugar, and milk in a medium saucepan over medium heat until melted and bubbly.
  2. Mix in peanut butter and vanilla extract until smooth.
  3. Add the oats, stirring until evenly coated.
  4. Portion the mixture onto a parchment-lined tray using a tablespoon or small cookie scoop.
  5. Flatten each portion slightly and create a small indentation for the caramel.
  6. Spoon about a teaspoon of caramel sauce into the indentation of each cookie.
  7. Melt the chocolate chips in the microwave, then drizzle over the cookies.
