Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup champagne
  • 1/2 cup peach puree
  • 1 cup powdered sugar
  • 1/2 cup unsalted butter, softened (for frosting)
  • 2 tablespoons peach puree (for frosting)
  • Fresh peach slices for topping
  • Sparkling sugar for garnish


Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. Whisk together flour, baking powder, and salt in a bowl.
  3. Cream together butter and sugar in a separate bowl until light and fluffy. Add eggs one at a time, then stir in vanilla.
  4. Mix in the flour mixture alternately with champagne and peach puree until just combined.
  5. Divide the batter into prepared cupcake liners and bake for 18-22 minutes, or until a toothpick comes out clean.
  6. Allow the cupcakes to cool completely before frosting.
