Description

A beautiful blend of juicy chicken breasts, sweet cherry tomatoes, and fresh spinach, all combined with the tangy richness of balsamic vinegar in one easy-to-make dish.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 cup balsamic vinegar
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup cherry tomatoes
  • 1 cup spinach


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season the chicken breasts with salt, pepper, and oregano.
  3. Add the chicken to the skillet and cook for about 7-8 minutes on each side until browned.
  4. Add garlic and cherry tomatoes to the skillet, and cook for 2-3 minutes until the tomatoes begin to burst.
  5. Pour balsamic vinegar over the chicken and tomatoes, and let simmer for another 5 minutes until the chicken is fully cooked.
  6. Stir in the spinach and cook until wilted.
  7. Serve warm.
