Description

A comforting bowl of bok choy chicken soup that brings warmth and flavor, perfect for chilly evenings.

Ingredients

  • 1 lb chicken breast, thinly sliced
  • 2 tbsp olive oil
  • 4 cups chicken broth
  • 4-5 baby bok choy, sliced (stems + leaves separated)
  • 1 onion, diced
  • 4 garlic cloves, minced
  • 1-2 inches fresh ginger, sliced
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tbsp soy sauce (optional)
  • 1 tsp sesame oil (optional)
  • Green onions (for garnish)
  • Chili flakes (for spice)
  • Lime wedges (optional for serving)

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Sauté the minced garlic, diced onion, and sliced ginger until fragrant, about 2-3 minutes.
  3. Add the thinly sliced chicken breast to the pot, cooking until it turns lightly golden on the outside.
  4. Pour in the chicken broth, seasoning the mixture with salt, black pepper, and soy sauce if desired.
  5. Allow the soup to simmer for 8-10 minutes, letting the flavors meld.
  6. Add the bok choy stems to the pot and cook for an additional 2 minutes.
  7. Finally, incorporate the bok choy leaves and cook for 2 more minutes until wilted.
  8. Drizzle sesame oil over the soup and serve hot, garnished with chopped green onions or a sprinkle of chili flakes for added heat.

Notes

Use fresh ingredients for the best taste. Adjust seasoning to personal preference, and consider adding lime juice for brightness.
