A refreshing no-bake dessert with layers of lemon pudding, whipped topping, and graham crackers that will transport you to sunny days.
Ingredients
- 1 box graham crackers
- 2 (3.4 oz) boxes instant lemon pudding
- 3 1/2 cups milk
- 1 (8 oz) container frozen whipped topping, thawed
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 1/2 cup lemon juice
- Zest of 1 lemon
Instructions
- In a medium bowl, whisk together the lemon pudding mix and milk until well combined.
- Let sit for 5 minutes to thicken.
- Fold in the whipped topping until smooth.
- In a separate bowl, mix together powdered sugar, vanilla extract, lemon juice, and lemon zest.
- Add the lemon mixture to the pudding mixture and stir until fully combined.
- In a 9×13 inch dish, layer graham crackers on the bottom.
- Spread half of the lemon pudding mixture over the graham crackers.
- Repeat with another layer of graham crackers and the remaining pudding mixture.
- Chill in the refrigerator for at least 240 minutes before serving.
Notes
Customize the lemon flavor by adding more lemon juice or zest. Chilling overnight enhances the flavor.
