Description

Stuffed peppers filled with a hearty mixture of ground meat, beans, rice, and spices, baked to perfection.


Ingredients

  • 4 bell peppers
  • 1 cup cooked rice
  • 1 pound ground beef or turkey
  • 1 cup black beans, drained and rinsed
  • 1 cup corn (fresh or frozen)
  • 1 cup diced tomatoes
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)
  • Fresh herbs for garnish (optional)


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the peppers by cutting the tops off and removing the seeds.
  3. Cook the ground beef or turkey in a skillet over medium heat until fully cooked.
  4. Mix together the cooked rice, black beans, corn, diced tomatoes, chili powder, cumin, salt, and pepper.
  5. Stuff each pepper with the filling mixture.
  6. Arrange the stuffed peppers upright in a baking dish.
  7. Add shredded cheese on top if desired.
  8. Cover the dish with foil and bake for 25 minutes.
  9. Uncover and bake for an additional 10-15 minutes until the peppers are tender.
  10. Garnish with fresh herbs and serve hot.

Notes

You can customize the filling based on your preferences. For a vegetarian option, use more beans or add vegetables.
