Description

Indulgent mini triple chocolate cheesecakes with a creamy texture and rich chocolate flavor, perfect for any occasion.


Ingredients

  • 8 oz cream cheese, softened
  • 1/2 cup sugar
  • 1/2 cup sour cream
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1/4 cup cocoa powder
  • 1/2 cup chocolate chips (dark, milk, or semi-sweet)
  • 1/2 cup crushed chocolate cookies (for crust)
  • 3 tbsp butter, melted (for crust)
  • Chocolate ganache or melted chocolate for topping


Instructions

  1. Preheat the oven to 325°F (160°C). Line a muffin tin with cupcake liners.
  2. Mix crushed chocolate cookies with melted butter and press the mixture into the bottom of each liner.
  3. Beat the cream cheese and sugar in a large bowl until smooth.
  4. Add sour cream and vanilla, and mix well.
  5. Beat in eggs, one at a time, until fully incorporated.
  6. Divide the batter evenly into three bowls. In one, mix cocoa powder; in another, stir in dark chocolate chips; in the last, add milk chocolate chips.
  7. Layer the mixtures in the cupcake liners to create a marbled effect.
  8. Bake for 20-25 minutes or until set.
  9. Allow to cool, then refrigerate for at least 2 hours.
  10. Top with chocolate ganache before serving.

Notes

Using room temperature cream cheese improves mixing. Use a toothpick to swirl the mixtures for a marbled effect.
