Indulgent mini triple chocolate cheesecakes with a creamy texture and rich chocolate flavor, perfect for any occasion.
Ingredients
- 8 oz cream cheese, softened
- 1/2 cup sugar
- 1/2 cup sour cream
- 1 tsp vanilla extract
- 2 large eggs
- 1/4 cup cocoa powder
- 1/2 cup chocolate chips (dark, milk, or semi-sweet)
- 1/2 cup crushed chocolate cookies (for crust)
- 3 tbsp butter, melted (for crust)
- Chocolate ganache or melted chocolate for topping
Instructions
- Preheat the oven to 325°F (160°C). Line a muffin tin with cupcake liners.
- Mix crushed chocolate cookies with melted butter and press the mixture into the bottom of each liner.
- Beat the cream cheese and sugar in a large bowl until smooth.
- Add sour cream and vanilla, and mix well.
- Beat in eggs, one at a time, until fully incorporated.
- Divide the batter evenly into three bowls. In one, mix cocoa powder; in another, stir in dark chocolate chips; in the last, add milk chocolate chips.
- Layer the mixtures in the cupcake liners to create a marbled effect.
- Bake for 20-25 minutes or until set.
- Allow to cool, then refrigerate for at least 2 hours.
- Top with chocolate ganache before serving.
Notes
Using room temperature cream cheese improves mixing. Use a toothpick to swirl the mixtures for a marbled effect.
