Description

Delightful mini strawberry tartlets with a flaky crust and creamy pastry filling, topped with fresh strawberries.


Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup unsalted butter, cold and diced
  • 1/4 cup sugar
  • 1 egg yolk
  • 2 tablespoons ice water
  • 1 cup milk
  • 1/4 cup sugar
  • 2 tablespoons cornstarch
  • 2 egg yolks
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, hulled and sliced


Instructions

  1. In a bowl, mix flour, butter, and sugar until it resembles coarse crumbs. Stir in the egg yolk and ice water until the dough forms.
  2. Roll out and shape the dough into tartlet pans. Bake at 350°F (175°C) for about 10-12 minutes until golden.
  3. In a saucepan, heat milk. In another bowl, whisk sugar and cornstarch; add egg yolks and whisk until smooth. Slowly add hot milk to the egg mixture, then return to the saucepan. Cook until thickened, stirring constantly.
  4. Remove from heat, stir in vanilla, and cool.
  5. Fill cooled tart shells with pastry cream and top with sliced strawberries.
  6. Serve and enjoy your stunning tartlets!

Notes

Chilling the dough before rolling out can improve the texture of the crust. For added flavor, consider mixing in citrus zest into the pastry cream.
