Description

Delightful bite-sized cakes infused with rich coffee flavor and crunchy walnuts, perfect for gatherings or cozy afternoons.


Ingredients

  • 200 grams unsalted butter or margarine
  • 200 grams golden caster sugar
  • 2 large eggs
  • 200 grams self-raising flour
  • 2 tablespoons espresso powder
  • 75 grams walnuts, roughly chopped
  • 1 tablespoon espresso powder (for the buttercream)
  • 200 grams unsalted butter (for the buttercream)
  • 400 grams icing sugar
  • Generous pinch of salt
  • 40 grams walnuts (for decoration)


Instructions

  1. Cream together the butter and sugar until light and fluffy (about 5 minutes).
  2. Add the eggs one at a time, mixing well after each addition.
  3. Fold in the flour and espresso powder until just combined.
  4. Gently fold in the chopped walnuts.
  5. Spoon the mixture into the prepared baking tray, filling compartments two-thirds full.
  6. Bake in a preheated oven at 180°C (350°F) for 20-25 minutes.
  7. Remove from the oven and let cool for a few minutes before transferring to a wire rack.

Notes

Use fresh espresso powder for the best flavor. Allow cakes to cool completely before frosting.
