Description

Delightful mini blueberry muffins that are fluffy and bursting with flavor, perfect for breakfast or a snack.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries


Instructions

  1. Preheat the oven to 375°F (190°C) and line a mini muffin tin with liners or spray with cooking spray.
  2. Mix together the flour, sugar, baking powder, and salt in a large bowl.
  3. Whisk together the melted butter, egg, milk, and vanilla extract in another bowl.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Gently fold in the blueberries.
  6. Fill the mini muffin cups about 3/4 full with the batter.
  7. Bake for 12-15 minutes or until a toothpick inserted in the center comes out clean.
