Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/4 cup unsalted butter, melted
- 1 large egg
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1 cup fresh blueberries
Instructions
- Preheat the oven to 375°F (190°C) and line a mini muffin tin with liners or spray with cooking spray.
- Mix together the flour, sugar, baking powder, and salt in a large bowl.
- Whisk together the melted butter, egg, milk, and vanilla extract in another bowl.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Gently fold in the blueberries.
- Fill the mini muffin cups about 3/4 full with the batter.
- Bake for 12-15 minutes or until a toothpick inserted in the center comes out clean.
- Let cool for a few minutes before transferring to a wire rack. Enjoy fresh or freeze for later!
