Description

A healthy and indulgent summer treat combining bananas, peanut butter, dark chocolate, and peanuts—perfect for satisfying cravings.


Ingredients

  • 2 large firm, ripe bananas (approximately 240g total)
  • 2-3 tablespoons natural creamy peanut butter (unsweetened)
  • 2 tablespoons roasted unsalted peanuts, roughly chopped
  • 1/4 cup (40g) dark chocolate chips (70% cacao or higher)
  • 1 teaspoon coconut oil
  • Sea salt flakes (optional)
  • Optional add-ins: mini pretzel pieces, shredded coconut, chopped dates


Instructions

  1. Peel the bananas and slice them into thick coins, about 1/2 inch each (you should get 16-20 coins).
  2. Arrange the banana slices on a parchment-lined baking sheet, making sure they do not touch.
  3. Freeze the banana slices for 15-20 minutes, until firm but not rock hard.
  4. Remove from the freezer and spread about 1/2 teaspoon of peanut butter on each banana coin.
  5. Sprinkle each with chopped peanuts and a pinch of sea salt (if using). Add any optional toppings as desired.
  6. In a microwave-safe bowl, combine the chocolate chips and coconut oil.
  7. Microwave the mixture in 15-second bursts, stirring each time, until melted and smooth (about 45 seconds total).
  8. Drizzle melted chocolate over each banana bite, or dip the tops for a thicker coating.
  9. Return the tray to the freezer for 30-60 minutes, until the chocolate is set and bananas are frozen solid.
  10. Let sit at room temperature for 5 minutes before serving for the best texture.
