A no-bake version of the classic key lime pie, these portable mason jar desserts combine a crunchy graham cracker crust with a creamy key lime filling, perfect for summer gatherings.


Ingredients

  • 2/3 cup heavy whipping cream
  • 2 tablespoons granulated sugar
  • 8 ounces cream cheese, softened
  • 7 ounces sweetened condensed milk
  • 1/4 cup bottled lime juice
  • Zest of 1-2 limes (to taste)
  • 1/2 cup graham cracker crumbs
  • 1 1/2 tablespoons sugar
  • 2 tablespoons unsalted butter, melted


Instructions

  1. Begin by making the crust. In a medium bowl, combine graham cracker crumbs, melted butter, and sugar, mixing until well combined.
  2. Press the mixture evenly into the bottom of your mason jars, creating a solid layer.
  3. In another bowl, beat the softened cream cheese until smooth. Gradually mix in the sweetened condensed milk without any lumps remaining.
  4. Next, add the lime juice and zest to the cream cheese mixture. Blend thoroughly until everything is well incorporated, creating a velvety filling.
  5. In a separate bowl, whip the heavy cream with granulated sugar until stiff peaks form. Gently fold this whipped cream into your lime mixture, maintaining its airy texture.
  6. Layer the filling on top of the crust in each jar. Aim for an even distribution to ensure every bite has the same delightful taste.
  7. Chill the jars in the refrigerator for at least 180 minutes to allow the flavors to meld together.

Notes

For best results, chill the jars overnight. You can also infuse the filling with other flavors like coconut or mango for a unique twist.
