Ingredients

  • 5 artichokes
  • 1 lemon
  • 2 leaves mint (or bay leaves)
  • 2 tablespoons extra virgin olive oil
  • 1 pinch salt
  • 1 handful parsley (chopped)
  • 2 tablespoons vegan mayo (optional)
  • 2 tablespoons chimichurri (optional)


Instructions

  1. Start by cleaning the artichokes. Trim off the stems to create a stable base. Cut the top inch off each artichoke to remove the spiky tips. Use a lemon half to rub on the cut areas to prevent browning.
  2. Fill a large pot with water and add the mint or bay leaves along with a pinch of salt and a sliced lemon for flavor. Place the steamer basket inside.
  3. Place the prepared artichokes in the steamer basket, ensuring they fit snugly. Cover the pot with a lid and bring the water to a boil.
  4. Once boiling, reduce the heat to a simmer. Allow the artichokes to steam for approximately 25 to 35 minutes, depending on their size. They are done when leaves pull off easily and the base feels tender.
  5. After steaming, drizzle the artichokes with extra virgin olive oil and sprinkle chopped parsley on top for a fresh finish.
  6. Serve warm, with optional dipping sauces like vegan mayo or chimichurri for an added touch.
