Description

A guide to preparing and cooking artichokes, transforming them into a delicious appetizer or side dish.


Ingredients

  • 4 artichokes
  • 1 tablespoon of olive oil
  • 1/2 lemon
  • Filtered water
  • Salt and pepper, to taste


Instructions

  1. Prepare the artichokes by washing them thoroughly under cold water.
  2. Trim the bottom of the stem and remove any tough leaves near the base.
  3. Use scissors to cut off the thorny tips of each leaf, about 1/4 to 1/3 of the way down.
  4. Slice off the top part of the artichoke with a serrated knife.
  5. Add a few inches of filtered water, 1 tablespoon of olive oil, and the juice from 1/2 a lemon to a large pot.
  6. Bring this mixture to a boil, then reduce it to a gentle simmer.
  7. Place the artichokes in the pot, ensuring they fit comfortably. Simmer for 35-45 minutes, or until the stems feel tender and the thicker outer leaves are easy to pull off.
  8. Carefully remove the artichokes from the pot and allow them to cool slightly.
  9. Lay them flat side down and cut them in half lengthwise.
  10. Scoop out the choke and any tough inner leaves with a spoon, discarding them.

Notes

Serve with a drizzle of olive oil or lemon, and enjoy with dips like vinaigrette or garlic aioli.
