Description

Delicious and nutritious homemade peanut butter eggs coated in dark chocolate, combining creamy peanut butter and a hint of sweetness for a healthier treat.


Ingredients

  • 1 cup creamy peanut butter
  • 1/3 cup coconut flour
  • 1/4 cup maple syrup
  • 1 cup dark or semi-sweet chocolate chips
  • 1/2 tablespoon coconut oil


Instructions

  1. Combine the peanut butter, coconut flour, and maple syrup in a medium-sized mixing bowl and stir until smooth.
  2. Form the mixture into egg shapes by rolling 1-inch balls and flattening them into ovals.
  3. Place the ovals on parchment paper on a cookie sheet and freeze for 30 minutes.
  4. Heat the chocolate chips and coconut oil in a small bowl in the microwave, microwaving for 30 seconds at a time, stirring until melted.
  5. Using two forks, coat the peanut butter eggs in the melted chocolate and let excess chocolate drip off.
  6. Transfer each egg back to the parchment paper to harden.
  7. Optional: Drizzle additional melted chocolate over the eggs for decoration.
  8. Refrigerate the eggs until ready to enjoy.

Notes

For smoother consistency, ensure peanut butter is at room temperature. You can also add sea salt or different flavor extracts to customize the eggs.
