Nutritious and fluffy crepes made with cottage cheese, perfect for breakfast or brunch.
Ingredients
- 1 cup cottage cheese
- 4 large eggs
- 1 cup flour (all-purpose or whole wheat)
- 1/2 cup milk
- 1/2 teaspoon salt
- Butter or oil for cooking
Instructions
- Combine cottage cheese, eggs, flour, milk, and salt in a blender. Blend until smooth.
- Heat a non-stick skillet over medium heat and add a small amount of butter or oil.
- Pour in a ladle of the batter and swirl to coat the bottom of the skillet.
- Cook for 2-3 minutes until the edges start to lift and the bottom is lightly golden.
- Flip and cook for an additional 1-2 minutes on the other side.
- Repeat with the remaining batter. Fill with desired sweet or savory fillings and enjoy!
Notes
Allow the batter to rest for at least five minutes for better texture. Feel free to customize the fillings to your liking.
