Description

Delicious cookies inspired by the classic Kentucky Butter Cake, featuring a buttery flavor, sweet glaze, and a perfect soft yet slightly crisp texture.

Ingredients

  • 2 ½ cups (310 grams) all-purpose flour
  • 2 large eggs
  • 1 cup (225 grams) unsalted butter, softened
  • 1 cup (200 grams) granulated sugar
  • ½ cup (100 grams) powdered sugar
  • 1 tsp vanilla extract
  • 1 tsp butter extract (optional)
  • 1 tsp baking powder
  • ¼ tsp salt
  • ½ cup (115 grams) unsalted butter (for glaze)
  • ¾ cup (150 grams) granulated sugar (for glaze)
  • ¼ cup (60 mL) water (for glaze)
  • 1 tsp vanilla extract (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream together the softened butter, granulated sugar, and powdered sugar until light and fluffy.
  3. Blend in the eggs, 1 tsp of vanilla extract, and optional butter extract until smooth.
  4. Fold in the flour, baking powder, and salt minimally to maintain dough structure.
  5. Roll the dough into 1.5-inch spheres and flatten them slightly on the baking sheets.
  6. Bake for 10-12 minutes until edges are set but centers are slightly underdone.
  7. Let cookies rest for 5 minutes before transferring to wire racks to cool.
  8. For the glaze, melt ½ cup unsalted butter and stir in sugar and water until dissolved, then add 1 tsp vanilla extract.
  9. Brush or drizzle glaze over warm cookies, allowing it to set.

Notes

For extra flavor, try adding almond extract to the dough or experiment with chocolate chips and nuts.
