Description

Delicious Greek yogurt brownies that are both fudgy and healthier, featuring a blend of Greek yogurt, applesauce, and dark chocolate chips.


Ingredients

  • 1/2 cup (120g) plain Greek yogurt (preferably full-fat or 2%)
  • 1/2 cup (115g) unsweetened applesauce
  • 1/2 cup (100g) granulated sugar or coconut sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup (60g) all-purpose flour (or whole wheat flour for healthier option)
  • 1/2 cup (50g) unsweetened cocoa powder
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (90g) dark chocolate chips (optional for extra richness)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease or line an 8×8-inch baking pan with parchment paper.
  3. In a medium-sized bowl, whisk together the Greek yogurt, applesauce, sugar, eggs, and vanilla extract until smooth and well combined.
  4. In another bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  5. Gradually add the dry ingredients into the wet mixture, stirring until just combined. The batter will be thick.
  6. If using chocolate chips, fold them into the mixture for extra richness.
  7. Pour the batter into the prepared baking pan and spread it evenly.
  8. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out mostly clean with a few moist crumbs (but not wet batter).
  9. Allow the brownies to cool in the pan for about 10 minutes before transferring them to a wire rack to cool completely.
  10. Cut into squares and enjoy!
