Delightful and creamy dessert bars combining Greek yogurt, honey, and crunchy pistachios, served on a buttery graham cracker crust.
Ingredients
- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- ¼ cup granulated sugar
- 16 oz cream cheese, softened
- ½ cup Greek yogurt
- ½ cup honey
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup finely chopped pistachios
- ¼ cup honey for drizzling
- ¼ cup chopped pistachios for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- Combine graham cracker crumbs, melted butter, and sugar in a bowl until well mixed.
- Press the mixture firmly into the bottom of a greased 9×9 inch baking pan.
- Bake the crust for 10 minutes and let it cool.
- Beat the softened cream cheese until smooth in a large bowl.
- Add Greek yogurt, honey, eggs, and vanilla extract, and mix until fully combined.
- Fold in the finely chopped pistachios gently.
- Pour the cheesecake mixture onto the cooled crust, spreading it evenly.
- Bake for 25-30 minutes until the edges set and the center remains slightly jiggly.
- Cool to room temperature, then refrigerate for at least 4 hours before slicing.
Notes
For best results, use room temperature cream cheese to avoid lumps in the filling.
