Ingredients
- 1 bunch asparagus
- 4 medium carrots
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon dried herbs (like thyme or rosemary)
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and trim the asparagus and peel the carrots. Cut the carrots into thin strips.
- In a bowl, toss the asparagus and carrots with olive oil, minced garlic, dried herbs, salt, and pepper until well coated.
- Spread the vegetables evenly on a baking sheet.
- Roast in the preheated oven for 20-25 minutes, or until tender and caramelized, stirring halfway through.
