Ingredients
- 8 oz rice noodles
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 cup bell peppers, sliced
- 1 cup carrots, julienned
- 1 cup broccoli florets
- 3 tablespoons soy sauce
- 2 tablespoons lime juice
- 1 tablespoon brown sugar
- 1/4 teaspoon red pepper flakes
- Fresh cilantro for garnish
- Chopped peanuts for garnish
Instructions
- Cook the rice noodles according to package instructions. Drain and set aside.
- Heat the vegetable oil over medium heat in a large pan. Add the minced garlic and sauté until fragrant.
- Add the sliced bell peppers, carrots, and broccoli to the pan. Stir-fry for about 5-7 minutes, or until the vegetables are tender.
- Mix together the soy sauce, lime juice, brown sugar, and red pepper flakes in a small bowl.
