- 1 pound (454 g) chicken breast (450 grams)
- 1 tablespoon (15 ml) olive oil (15 milliliters)
- 1 teaspoon (5 ml) salt (5 grams)
- 1 teaspoon (5 ml) black pepper (5 grams)
- 1 tablespoon (15 ml) garlic powder (8 grams)
- 1 tablespoon (15 ml) onion powder (8 grams)
- 2 tablespoons (30 ml) honey (30 milliliters)
- 1 tablespoon (15 ml) soy sauce (15 milliliters)
- 1 bell pepper, sliced (1)
- 8 ounces (227 g) penne pasta (225 grams)
- 1 cup (240 ml) heavy cream (240 milliliters)
- 1 cup (240 ml) chicken broth (240 milliliters)
- 1/2 cup (120 ml) grated alternative cheese (50 grams)
- 1 teaspoon (5 ml) red pepper flakes, optional (5 grams)
- 2 tablespoons (30 ml) chopped parsley (8 grams)
Instructions
- Boil a pot of water and cook the penne pasta according to package instructions until al dente. Drain and set aside.
- Cut the chicken breast into bite-sized pieces.
- In a large skillet, heat the olive oil over medium-high heat.
- Add the chicken pieces to the skillet and season with salt, black pepper, garlic powder, and onion powder.
- Cook the chicken until browned and cooked through, about 5-7 minutes.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add the sliced bell pepper and sauté for 3-4 minutes until slightly softened.
- Add honey and soy sauce to the skillet with the bell pepper, stirring to combine.
- Return the cooked chicken to the skillet and toss to coat in the honey-soy mixture.
- Pour in the heavy cream and chicken broth, stirring to combine.
- Bring the mixture to a simmer and let it cook for about 5 minutes until slightly thickened.
- Stir in the grated Parmesan cheese and optional red pepper flakes, mixing until the cheese is melted and the sauce is smooth.
- Add the cooked pasta to the skillet, tossing to coat in the sauce.
- Garnish with chopped parsley before serving.
