Ingredients
- Glass noodles
- Shrimp or chicken (optional)
- Thai chili
- Lime juice
- Fish sauce
- Garlic
- Coriander (cilantro)
- Vegetables (carrot, cucumber, onion)
- Peanuts (for garnish)
Instructions
- Soak glass noodles in warm water for about 10-15 minutes until soft, then drain.
- If using shrimp or chicken, cook and set aside.
- In a bowl, mix lime juice, fish sauce, minced garlic, and chopped Thai chili to create the dressing.
- In a large bowl, combine the soaked noodles, cooked shrimp or chicken, sliced vegetables, and pour the dressing over.
- Toss everything together until well-mixed.
- Garnish with chopped coriander and crushed peanuts. Serve chilled.
