Description

A refreshing and vibrant salad featuring glass noodles, crunchy vegetables, and a zesty dressing.


Ingredients

  • Glass noodles
  • Shrimp or chicken (optional)
  • Thai chili
  • Lime juice
  • Fish sauce
  • Garlic
  • Coriander (cilantro)
  • Vegetables (carrot, cucumber, onion)
  • Peanuts (for garnish)


Instructions

  1. Soak glass noodles in warm water for about 10-15 minutes until soft, then drain.
  2. If using shrimp or chicken, cook and set aside.
  3. In a bowl, mix lime juice, fish sauce, minced garlic, and chopped Thai chili to create the dressing.
  4. In a large bowl, combine the soaked noodles, cooked shrimp or chicken, sliced vegetables, and pour the dressing over.
  5. Toss everything together until well-mixed.
  6. Garnish with chopped coriander and crushed peanuts. Serve chilled.

Notes

Use fresh ingredients for the best flavor and texture. Adjust the heat level by varying the amount of Thai chili.
