Description

A refreshing salad featuring crisp Persian cucumbers, sesame oil, and a blend of savory and sweet flavors.


Ingredients

  • 5 Persian cucumbers
  • 1/2 tsp salt
  • 1/2 tbsp sesame oil
  • 3/4 tbsp light soy sauce
  • 1/2-1 tbsp sugar (adjust according to taste)
  • 3/4 tbsp rice vinegar
  • 1 tbsp chili oil
  • 1/2 tbsp sesame seeds
  • 1/2 tbsp garlic, minced (optional)


Instructions

  1. Rinse the cucumbers and slice one end at an angle.
  2. Continue carving at an angle, creating oval slices. Adjust thickness based on preference.
  3. Place cucumber slices in a bowl or container and sprinkle with 1/2 tsp salt.
  4. Mix well and refrigerate cucumbers for at least 20 minutes to draw out water.
  5. After 20 minutes, drain water and rinse cucumbers for 10 seconds before returning them to the bowl.
  6. Add sesame oil, light soy sauce, sugar, rice vinegar, chili oil, sesame seeds, and minced garlic (if using).
  7. Stir until all ingredients are well combined and serve.

Notes

For added freshness, consider garnishing with cilantro or sliced green onions. Allowing the salad to marinate for 10-15 minutes enhances flavor integration.
