- Coconut milk
- Homemade curry powder
- Onion

Instructions
- In a skillet, heat oil over medium heat.
- Sauté chopped onions until translucent.
- Add minced garlic and grated ginger, cooking until fragrant.
- Stir in chopped tomatoes and spices, cooking for a few minutes.
- Add fish fillets and coat with the mixture.
- Pour in coconut milk and bring to a simmer.
- Cook until the fish is fully cooked through, about 10-15 minutes.
- Season with salt and pepper to taste.
- Garnish with fresh herbs before serving.
